Keto Cheesy Stuffed Peppers with Turkey & Cauliflower Rice Filling

Always precook the peppers a bit in the oven before stuffing! It helps with moisture control, texture and flavour. I paired the green pepper with turkey for a couple reasons. 

1. It’s keto! – green pepper are lower in carbs than red peppers, and turkey is a pretty lean choice of poultry.

2. Turkey is very versatile when it comes to flavour combinations, and green peppers are sometimes overlooked compared to their red counterparts.

Cooked the ground turkey meat with cauliflower rice, cumin, tomato paste, cheddar, parsley and crispy onion flakes.

Fun Fact: The cultivation of peppers spread to the Mediterranean region after Christopher Columbus’s voyages in the late 15th century. Peppers were quickly adopted into the culinary traditions of countries like Spain, Italy, and Greece. In these regions, peppers were stuffed with a variety of fillings, including rice, meat, cheese, and spices.
