Crunchy buttery crust with graham crackers. Opted for muscovado sugar and brown butter – that created such a beautiful complexity in the flavour of the base. In contrast, the mango and cream cheese filling was zesty and sharp. Skipped the flour, added eggs to balance the flavours and baked it in a steamed oven to keep the surface from cracking.
Added a bit of lemon juice and zest while making the blueberry jam for extra acidity to help make the overall dish lighter.
