Watermelon Gazpacho with Feta Cheese & Oregano

About This Project

A refreshing, summer-y dish. The ingredients for the base need to marinate in the fridge for no less than a couple hours before blending. Added bread for a thicker consistency. For some crunch I made croutons out of tomatoes, cucumber, red pepper and feta cheese. Sprinkled some dried oregano on top to bring a more earthy finish.
