Roasted Beef Bone Broth Pho

This was a fun instant pot project. Submerged in water roasted beef bones, charred onions, shallots and ginger, toasted spices, fish sauce and a beef chuck all got to know each other nicely for a few hours in the pressure cooker. The broth turned out very flavourful – the smokiness of the charred veggies and toasted spices paired perfectly with the deep beef flavour. Added a bit of lime juice afterwards for that tangy punch. Paired with keto shirataki noodles. Toppings of choice: shaved beef, soft-boiled eggs, bean sprouts, cilantro, scallions, sesame seeds and a lime wedge.
