Roasted Tomato Risotto with Goat Cheese & Parsley Oil

Choosing to use roasted cherry tomatoes with rosemary to cook the rice in was a great idea. It added a bright, refreshing element to the dish. The goat cheese in combination with the parmesan and butter were melting in the mouth. Added a bright green parsley oil for a bit of colour contrast and slight bitter and peppery flavour undertones.
