NY Steak with Caramelised Onions & Béarnaise

A cult classic. NY steak doesn’t need much explaining. Paired with caramelised onions for sweetness and béarnaise for tanginess.

Note: If you look closely, you can see the sauce was starting to split. A way to fix that would be adding a thin stream of hot water while whisking constantly. Add as much as needed and then adjust consistency with more butter, and add salt until desired flavour. That trick has saved my ass a couple times…
